This has already been answered by others, but my understanding is that most entailments were generation-skipping ones. Mr X has a property he wants to protect, and so he leaves it to his eldest grandson, as yet unborn. When his son turns 21, Mr X makes him sign the same sort of document for himself, since if he doesn't sign it, Mr X withholds the son's allowance.

Given how lazy the P&P Mr Bennet is, I could well imagine his father insisting his sign such a document, but even if he didn't, Longbourn would still be lost. But as a plot device, if Mr Bennet's father resented having to agree to the generation-skipping entailment and so Mr Bennet wasn't forced to sign anything, I suspect it would be ended as soon as Mr Bennet's son was of age and without the complicated shenanigans I've seen described to break the entail. And even if this is somehow wrong, it's close enough for a fanfic.
