I think it most likely that he (perhaps subconsciously fighting his attraction to her, trying to find the reasons why she wasn't at all attractive) tried to list all the features earlier described as not complementary (lack of symmetry etc.) I can imagine, especially among male friends, drinking port or brandy, a man saying various critical remarks on her features, half-ironic, without it being really rude/dishonorable/ungentlemanly.

On the subject of him not being capable of such rudeness, I think the insult at the Meryton assembly proves that he was; he also made some cutting sarcastic remarks like "every savage can dance" to Sir William. Perhaps Darcy wasn't as coarsely and rudely critical as Miss Bingley when she disparaged Elizabeth's muddy petticoats at Netherfield or tanned appearance at Pemberley, but Darcy was still capable of potentially hurtful, cutting remarks.
