I have a tendency to overuse “that” but I agree there are plenty of times where it is needed.

In the example you gave, "The conviction that Mr. Darcy would disapprove…” The word “that” alerts me I’m about to read what the conviction is. Without “that” I would probably have to reread the sentence to get the meaning.
