Stansted isn't too bad, not like Heathrow which is hell on wheels. you should clear the airport inside half an hour unless some loony has been playing silly buggers and security is on its toes and paranoia on steroids rules the day. Then what happens depends on whether the train breaks down just before Stratford. Do NOT assume our trains are [a] reliable on time or [c] anyone who works on them likely to know or care what's going on.
The chunnel is moderately efficient, and the rolling stock and trains are modern, clean and fast [assuming there aren't Ethiopians on the line or the wrong kind of snow outside] because it goes through Kent where the rich people live. Eurostar is probably your best bet, and Charles de Gaulle is a fairly good airport. If I was flying in to Europe I'd fly to France and take the chunnel. Stansted is my 'local' airport, which isn't saying a lot.
